Pancakes for dinner? Why not? They’re healthy and filling and very versatile. You can pile them high and douse them with syrup or roll them up like tacos and stuff them with berries or chocolate or whatever the imagination allows. Pancakes go with just about anything: fruits, chocolate, jellies, marshmallows, and, of course, a sweet syrup, preferably maple syrup. Make them thick, make them thin, make them fluffy or crusty, stack them high or just one at a time. Pancakes are a very social meal, satisfying, and something to be enjoyed alone or with others. They can be any shape, any size and so much more. Pancakes are both fun and delicious. Who wouldn’t want pancakes for dinner?

This is a simple story, told in rhyming verse, with colorful and palate tempting illustrations. Philip D. Cortez’s picture book, Pancakes for Dinner!, is an amusing look at a very simple meal option.
